Commercial Cookery
Approved by the World Association of Chefs’ Societies (WACS), North Metropolitan TAFE’s commercial cookery qualification provides you with the skills and knowledge to become a qualified chef.
The program is updated with guidance from a group of industry leaders, ensuring you learn the latest, most relevant practices.
You will develop the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. Upon completion of our course, you will be able to work in various kitchen settings, such as restaurants, hotels, pubs, cafes and cruise ships.
You could start on your pathway to a career in the kitchen with the new four week Future Chef Job Ready Program delivered at our Joondalup campus.
This skill set will combine training with a work placement in our real life training environment, the kitchen at Pavilion Restaurant. You could also have the chance to connect with apprenticeship opportunities and get started on your way to becoming a chef.
The Future Chef Program is part of the Job Ready pathways to employment program and is free for the following eligible students:
- Persons aged 15—24 years at the time of enrolment (excluding students enrolled at school)
- Persons and dependents of persons in receipt of services from Commonwealth support or employment services programs JobActive, Online Employment Services, or ParentsNext
- Persons and dependents of persons receiving the Youth Allowance, AUSTUDY or ABSTUDY
- Persons and dependents of persons holding a pensioner concession card or Health Care Card; or a Repatriation Health Benefits Card issued by the Department of Veterans' Affairs
- Dependents of persons who are inmates of a custodial institution
Baking and Patisserie
Whether you want to delve into the details of making bread or to become a master of cake decorating, North Metropolitan TAFE’s baking and patisserie programs will set off your career.
You will learn to make a range of breads, pastries and cakes using baking equipment and machinery in fully-equipped, professional facilities. You will also learn to work safely and effectively, and to monitor operational processes in the retail baking sector.

Certificate III in Commercial Cookery
Turn your love for cooking into a career
Gain the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You'll graduate as a qualified cook with a wide range of cookery skills.
Love cooking and want the formal skills to turn your passion into a career?
This Certificate III in Commercial Cookery provides you with the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You'll learn about effective communication, occupational health and safety procedures and workplace hygiene.
You'll gain practical skills in our training kitchens and put these skills into practice in The Pavilion Restaurant, NMTAFE's fine dining, à la carte training restaurant that is open to the public.
When you graduate as a qualified cook with a wide range of cookery skills you'll be able to work in various establishments including restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.
Certificate IV in Commercial Cookery
Want to run a fast paced kitchen?
Gain the knowledge and skills to lead a team in a commercial kitchen. You'll learn to plan, prepare and cook food, including dishes suitable for cultural and dietary requirements, and on completion you could find work as a supervisor/team leader cook or chef in a range of kitchens.
Want to run a fast paced kitchen?
When you complete the Certificate IV in Commercial Cookery you will be able to work as a supervisor/team leader cook or chef in a range of kitchens.
You will gain the knowledge and skills to lead a team in a commercial kitchen and be able to plan, prepare and cook food.
Commercial Kitchen Skill Set

This skill set covers how to follow organisational infection prevention and control procedures, including implementing standard and transmission-based precautions and responding to infection risks to ensure you're working safely.

This skill set covers all the 'must know' skills that employers are looking for, so you'll be skills ready and job ready. It covers how to follow organisational infection prevention and control procedures, including implementing standard and transmission-based precautions and responding to infection risks to ensure you're working safely.
In the Commercial Kitchen skill set, you'll learn about the safe use of commercial kitchen equipment, how to clean food preparation areas, storage areas, and equipment efficiently and minimising negative environmental impacts, preventing food contamination including how to identify and control food hazards, and gain general kitchen and food preparation skills.
Jobs that could lead from this skill set includes cooks, chefs, caterers, kitchen stewards, kitchen hands, and bar and food and beverage servers and attendants.

Our Future Chef Job Ready Program will help you turn a passion for food into an exciting career in hospitality.
This Free for eligible students*, four week Future Chef Job Ready Program is designed to get you into the creative food and restaurant industry.
You'll gain a combination of intensive training and work experience in a real commercial kitchen which may give you a head start into gaining an apprenticeship or other employment opportunities in the hospitality sector.
The four week program includes a total of five days work placement where you will gain real, hands on industry experience in addition to in class training.
After completing this Job Ready Program you could:
- be offered an apprenticeship
- find employment opportunities in other areas of the hospitality sector
- embark on further training to enhance your employment prospects.
Certificate III in Patisserie

Use your skills to work as a patissier or pastry chef in a patisseries, cafés, restaurants or hotels anywhere.
A sweet career creating tasty delights
When you complete the Certificate III in Patisserie you will have the skills to work as a patissier or pastry chef in a patisserie, café, restaurant or hotel.
You will gain the knowledge and skills in our training kitchens to work fast and effectively in a commercial kitchen team and plan, prepare and bake mouth-watering cakes, tarts, petits fours, pastries, yeast goods and chocolates.
You will also learn about cleaning and sanitisation, food safety programs, personal and environmental hygiene, and workplace health and safety.
The Certificate III in Patisserie is also delivered as an apprenticeship. Please see the Apprenticeships section for more information.
Certificate IV in Patisserie
Build on the skills gained in the Certificate III in Patisserie or Commercial Cookery
Become a qualified cook specialising in patisserie and take on a leading or supervisory role. In this course you'll cover working fast and effectively in a commercial kitchen team, planning and baking a wide range to deserts and pastries and team management skills.
Fine tune your skills in the kitchen and create sweet masterpieces
This course builds on the skills gained in the Certificate III in Patisserie or Commercial Cookery qualifications and equips you with the skills needed to be a qualified cook specialising in patisserie. On successful completion you'll be ready to work a patissier or pastry chef in a variety of hospitality environments and take on a leading or supervisory role in the kitchen.
In our training kitchens, you will cover working fast and effectively in a commercial kitchen team and be able to plan, prepare and bake mouth-watering cakes, sponges, tarts, petits fours, pastries, chocolate and sugar show pieces and decoration techniques. You'll also learn about financial management, leading staff and teams, cleaning, food safety programs, hygiene, managing workplace conflict, coaching others and workplace health and safety.
When applying for this course, prior study or experience within the industry will be considered. If you have limited study or experience in this field, you may be directed to a course at a more suitable level for your skills.
