This Certificate III in Commercial Cookery provides you with the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You'll learn about effective communication, occupational health and safety procedures and workplace hygiene.
You'll gain practical skills in our training kitchens and put these skills into practice in The Pavilion Restaurant, NMTAFE's fine dining, à la carte training restaurant that is open to the public.
When you graduate as a qualified cook with a wide range of cookery skills you'll be able to work in various establishments including restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.
The Certificate III in Commercial Cookery is also delivered as an apprenticeship; please see the Apprenticeships section for more information.

To undertake this course as an apprenticeship, you must be employed in a training contract by an appropriate organisation to study.
You'll be able to access your personal timetable (find out how on our Timetables page), once you have paid your fees. In the meantime the information below provides an indication of the time commitment required to complete this course, depending on available study options.
On campus
Orientation
You are required to attend orientation where important information will be provided regarding timetables, uniforms and tools.
Attendance in class
This course requires your attendance in class 4 days per week, across 2 semesters when studied full time.
Attendance in The Pavilion Restaurant - Joondalup (Kendrew Crescent)
You will be required to attend work placement in our on-campus à la carte training restaurant to develop your practical skills and gain experience. Restaurant classes run until 9:00pm, 2 or 3 nights per week.
At-home study
As well as the in-class component, you will need to complete additional study each week outside of scheduled classes, including private study, assignment preparation, and research.

Bring your own device (BYOD) is encouraged but not essential. If you don’t have access to a computer and WiFi at home, we recommend using our library computers during library hours.
As a student you will also have additional costs associated with your study, for example text books and stationery, printing and other materials required for your assignments.
In addition, the following uniform is required to be purchased at approximately $500:
