Commercial Cookery

Approved by the World Association of Chefs’ Societies (WACS), North Metropolitan TAFE’s commercial cookery qualification provides you with the skills and knowledge to become a qualified chef.

The program is updated with guidance from a group of industry leaders, ensuring you learn the latest, most relevant practices.

You will develop the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. Upon completion of our course, you will be able to work in various kitchen settings, such as restaurants, hotels, pubs, cafes and cruise ships.

Certificate III in Commercial Cookery

Turn your love for cooking into a career

Gain the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You'll graduate as a qualified cook with a wide range of cookery skills.

This qualification is part of the Lower fees, local skills program where you'll pay only half of the standard course fees.

North Metro TAFE's Certificate III in Commercial Cookery provides you with the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You'll learn about effective communication, occupational health and safety procedures and workplace hygiene.

When you graduate as a qualified cook with a wide range of cookery skills you'll be able to work in various establishments including restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.

Want to run a fast paced kitchen?

Gain the knowledge and skills to lead a team in a commercial kitchen. You'll learn to plan, prepare and cook food, including dishes suitable for cultural and dietary requirements, and on completion you could find work as a supervisor/team leader cook or chef in a range of kitchens.

Want to run a fast paced kitchen?

When you complete the Certificate IV in Commercial Cookery you will be able to work as a supervisor/team leader cook or chef in a range of kitchens.

You will gain the knowledge and skills to lead a team in a commercial kitchen and be able to plan, prepare and cook food.

Commercial Kitchen Skill Set

This skill set covers all the 'must know' skills that employers are looking for, so you'll be skills ready and job ready. In the Commercial Kitchen skill set, you'll learn about the safe use of commercial kitchen equipment, how to  clean food preparation areas, storage areas, and equipment efficiently and minimising negative environmental impacts, preventing food contamination including how to identify and control food hazards, and gain general kitchen and food preparation skills.

Certificate II in Kitchen Operations (Commercial Cookery/Patisserie Pre-Apprenticeship)

Begin your commercial cookery career with this Certificate II in Kitchen Operations Pre-Apprenticeship course

You will learn about effective communication, occupational health and safety procedures and workplace hygiene. You will also gain skills to produce quality foods, plan menus, prepare food according to dietary or cultural needs, control costs, work as part of a team, and serve a range of meals in a professional manner. These skills will be practiced in a simulated work environment or at an appropriate hospitality establishment.

Begin your commercial cookery career with this Certificate II in Kitchen Operations Pre-Apprenticeship course

If you’re looking to work in commercial kitchen environments in restaurants, hotels, cafes, care facilities or schools, this pre-apprenticeship course could be just the kick start your career needs. The course is delivered in partnership with Hospitality Group Training (HGT) the largest employer of hospitality apprentices in WA.
You’ll gain practical food preparation and cookery skills through work placements in professional kitchens. Upon completion of this course, you will have the skills required to begin a commercial cookery or chef apprenticeship.

Work experience with hand-picked employers

As part of this course, HGT will match you with hospitality employers where you will gain work experience. On completion of this, successful and suitable graduates will be guaranteed apprenticeship positions.
